Between November 15 and December 31, 2021, getfresh is offering a seasonal festive menu featuring Kabocha Squash, also known as Japanese Pumpkin. This winter vegetable is hard on the outside with green skin and yellow-orange color on the inside and is renowned for its delicious sweet and nutty flavor.

The Japanese Pumpkin Menu includes :

Vegan Japanese Pumpkin “Mousse”
Sweet Japanese Pumpkin vegan mousse, date and cashew crumble, toasted coconut flakes and pumpkin seeds.
Pumpkin Soup
Creamy Japanese pumpkin soup with sunflower seeds.

Roasted Pumpkin Salad

Roasted Japanese pumpkin served with beetroot, wild rocket, sunflower seeds, feta cheese, and honey balsamic dressing.

Pumpkin Ravioli

Japanese Pumpkin and ricotta cheese, garlic and rosemary butter, sundried tomatoes, asparagus, wild rocket and parmesan cheese.

Tokyo Bowl

Sashimi-grade Akami tuna, raw salmon, salmon roe, hass avocado, Japanese pumpkin, baby radish, spring onion, fried shallots, nori seaweed, Japanese soy vinaigrette served over organic rice berry & jasmine rice.

Japanese Pumpkin Hummus

Japanese Pumpkin slowly cooked with chickpeas, blended with extra virgin olive oil, tahini paste, roasted garlic and la vera smoked paprika, served with fresh vegetable crudités and pita bread.

Hailing from Belfast, Sam studied the culinary arts in Ireland and quickly made his mark in the food and beverage scene in Ireland – rising to head chef at The Merchant Hotel Belfast, Ireland’s leading luxury five-star hotel. He was also the recipient of 7 gold medals at “Salon De Culinaire” over a 3-year period.

After several years honing his craft, Sam’s passion for Asian cuisine led him to relocate to Thailand. Over the last 10 years he has developed an impressive arsenal of culinary techniques focusing on fusion between Western and Asian dishes. Sam was part of the opening team at Wine Connection and spent 7 years supporting that chain’s impressive growth in Southeast Asia.
